Sophie's special lunch

I made a special lunch for our team of 30, which is quite a challenge on only two hot plates. I chose "shakshuka" a super simple and flavorful dish from Israel. I love that cuisine because of the rich flavors, many spices and vegetables used. Israeli desserts are also super delicious and sweet. This morning I had already spoiled the whole team with the coconut date cake, full of dates, marija cookies & coconut. Not very healthy but incredibly delicious!

How do you make it?

Ingredients

Shakshuka

  • 8 cans concentrated tomato paste
  • 4 packs of tomato paste3 jars sun-dried tomato
  • 30 fresh tomatoes
  • 2 red onions
  • 4 garlic cloves
  • 2 red peppers
  • 15 pointed peppers
  • fresh basil
  • 4 tbsp dried thyme
  • 30 eggs
  • 10 Turkish breads

Yogurt dressing

  • 5 packs of Greek yogurt
  • 5 cucumbers
  • 5 lemons zest and juice
  • pepper
  • fresh mint
  • cumin powder

Preparation

Dice the onion and fry it with olive oil in the pan. I used 1 onion per pan, also divide the other ingredients evenly between the two pans. Squeeze the garlic and add it. Cut the pointed peppers into long strips, the tomatoes into wedges of 4 and add the tomato paste and dried tomatoes. It is still quite a lot of cutting work fortunately there are plenty of colleagues who come to help me.

Let everything simmer for 15 minutes and then add the red pepper and herbs. Let this simmer for another 5 minutes. Now it's teamwork. One person makes the dimples with a spoon and the other person breaks the eggs into these. Leave the pan on the heat with the lid on for another 15 minutes, until the eggs are almost hard-boiled and the egg whites are actually colored white.

For the yogurt dressing, put all the yogurt in a large bowl. Grate the cucumber into fine strands or cut it into small cubes. Grate the zest of the lemon and squeeze out the juice. Finely chop the fresh mint and mix it into the yogurt along with the cumin powder and fresh pepper.

Each person gets a piece of bread, a scoop of shakshuka with egg and yogurt. And how to eat this: Simple, dip the bread in the shakshuka and yogurt and if you like spicy the sriracha hot chili sauce tastes very good with it.
